Salmon with Cucumber Sauce

1 tsp Marcum Soul Seasoning Blend
1 cup Sour Cream
1/2 cup Cucumber, diced
1/2 cup Diced Tomatoes


You can also substitute fresh, chopped green onion for the cucumber.


  1. Preheat oven to 400 F.
  2. Dice cucumber. Mix cucumber and tomato with Coburn Farms Light Sour Cream and Marcum Soul Seasoning; set aside.
  3. Place frozen Port Side Salmon Filets on foil-covered baking sheet. Bake salmon approximately 20 minutes or to an internal temperature of 165?F.
  4. Place cooked salmon onto plate and top with cucumber sauce; serve with Northern Bean Tomato Salad.
