Salmon with Cucumber Sauce

- 1 tsp Marcum Soul Seasoning Blend
- 1 cup Sour Cream
- 1/2 cup Cucumber, diced
- 1/2 cup Diced Tomatoes
NotesYou can also substitute fresh, chopped green onion for the cucumber.
- Preheat oven to 400 F.
- Dice cucumber. Mix cucumber and tomato with Coburn Farms Light Sour Cream and Marcum Soul Seasoning; set aside.
- Place frozen Port Side Salmon Filets on foil-covered baking sheet. Bake salmon approximately 20 minutes or to an internal temperature of 165?F.
- Place cooked salmon onto plate and top with cucumber sauce; serve with Northern Bean Tomato Salad.
