Baja Shrimp Tacos

  • 16 oz, Portside Cooked Shrimp
  • 4 Tio Santi 8″ Tortillas
  • 1 pack Senora Verde Taco Seasoning
  • 1 cup, Fresh Express Coleslaw
  • 2 Jalapeno Peppers, sliced
  • 2 Limes
  1. First thaw out the shrimp and remove tails.
  2. Next toss the shrimp in lime juice and the packet of Senora Verde Taco Seasoning. Let them sit for atleast 10 minutes in marinade.
  3. While shrimp are “marinating” toast off the tortillas in a large skillet over medium heat. Then set aside and cover with a towel.
  4. Prepare coleslaw according to directions on packaging
  5. Add 1 tbsp of oil to the pan then toast each side of the tortilla for 2 minutes.
  6. Assemble the tacos, adding in coleslaw, shrimp, then jalapenos.
  1. Pairs well with Senora Verde Salsa or Taco Sauce.
  2. Sliced avocado and chopped cilantro will add a fresh component to dinner.
  3. Serve with Spanish Rice, refried beans, or pico de gallo to complete the meal.
