Vegetable Fried Rice

Ingredients
2 Tbsp Vegetable Oil
1 cup Instant Rice
1 pkg Onion Soup Mix
2 1/2 cups Water
1 Tbsp Soy Sauce
2 Grade A Large Eggs
2 Tbsp Carrots (grated)

Notes

This is quick and tasty served with any stir fry. We like to eat a lot of Chinese foods, so it's important that I know how to make fried rice that tastes great with whatever we have to fix that night. In a pinch, you can add sliced peppers and cooked cubed chicken or Portside shrimp and just call it a whole meal!

Directions

  1. In a large skillet, heat the oil and saute the rice until golden brown.
  2. Add the soup mix, water and soy sauce. Cover and simmer for 20-25 minutes or until all of the water is absorbed.
  3. Make a hollow in the center of the rice. Quickly stir eggs into it until they're set, then mix together the eggs and rice.
  4. Add carrots and stir until the carrots are distributed throughout.
