Potato Salad

6 Idaho Potatoes
1 Tsp Garlic Powder
1 Tsp Iodized Salt
1/2 Tsp Ground Black Pepper
1 Red Onion
4 Tbsp Olive Oil
1 1/2 Tbsp White Vinegar



  1. Wash and scrub potatoes.
  2. Boil in hot water for 10 minutes. Remove potatoes, and peel while hot. Set aside in a bowl and let cool.
  3. Once cool, slice potatoes into quarters and then again into 1/3 inch slices.
  4. Combine potatoes, chopped onion, garlic powder, salt and pepper in a medium-sized bowl. Toss lightly.
  5. Mix in olive oil and white vinegar. Toss well and let marinate for at least 2 hours at room temperature.
