Cauliflower Hummus

Serves 2-3 cups

1 head cauliflower, timed and cut into florets
3 garlic cloves, chopped
5 tablespoons of tahini
Juice of two lemons
1½ teaspoons paprika
¼ - ½ cup vegetable broth
1 teaspoon salt
Fresh ground black pepper

  1. Preheat oven to 450ºF. Lay the florets on a baking sheet lined in parchment paper.
  2. Place in oven for 20-30 minutes or until soft and a little golden brown. Let cool.
  3. Place the cauliflower in a food processor with the garlic, tahini, lemon juice, paprika, salt and pepper. Process. Add ¼ cup vegetable broth and process until smooth. Add more vegetable broth if it is too thick.
