Cilantro-Lime Tilapia with Garlic Rice

Directions
- Thaw tilapia and preheat oven to 350°F.
- While the tilapia is thawing, prep garlic, cucumber and cilantro. For the lime, zest one lime, then thinly slice it and cut the other into wedges.
- Once thawed, season tilapia with a mixture of garlic powder, salt and pepper. Place lime zest, and some chopped cilantro on top, then set aside.
- In a medium sized pot on medium heat, add a tbsp of oil and allow to heat up, then add garlic and rice. Stir for 1 minute, then add coconut milk.
- Bring to a boil, then move the heat to a simmer, and cover for 20 minutes.
- While rice is cooking, take a pan lined with parchment paper and add tilapia then place the lime slices on top, then cover with foil.
- Cook for 15 minutes.
- Once tilapia and rice are done, assemble the plate with rice, cucumbers, and fish. Garnish with remaining cilantro and enjoy!

- You can sub one can of vegetable broth for the Coconut Milk
