Vegetable Soup

2 Tbsp Olive Oil
1 Tbsp Parsley Flakes
Salt and Pepper To Taste
1 Cup Pickwell Farms Peas
1 Cup Pickwell Farms Corn
1-2 diced Idaho Potatoes
1 Large, diced Tomato
2 minced Garlic Cloves
1 chopped Celery
2 chopped Carrotts
1 chopped Yellow Onions
8 Cups Chicken Stock


  1. In a large pot, add olive oil and warm on medium heat. Saut? the following vegetables: onions, carrots, celery, garlic and potatoes. Cook until vegetables have softened - 6-8 minutes.
  2. Add tomato, corn and peas and chicken stock. Stir to combine ingredients and then add parsley. Stir, cover and reduce heat to low-medium.
  3. Let soup simmer for 2 hours. If you don't have time to let the soup simmer for that long, let it cook it on medium heat for 15-20 minutes stirring occasionally.
  4. Add salt and pepper to taste and enjoy!
  5. Serve with Morning Delight Biscuits or Crackers.
