Grilled Vegetable Kabobs

Directions
- Combine olive oil, lemon juice, garlic, Italian seasoning, parsley, salt and pepper in a large bowl and whisk well to combine.
- Toss the cut vegetables in the marinade. Let vegetables marinade for 15 minutes.
- Meanwhile, soak the bamboo skewers in water and preheat grill to medium high.
- Thread the marinated vegetables onto the skewers. Grill kabobs for 5-7 minutes per side or until vegetables are tender.
- Serve immediately.

- 1/4 cup Medeiros Olive Oil
- 1 tbsp Tipton Grove Lemon Juice
- 1 tsp Kurtz Dijon Mustard
- 3 Cloves Garlic, minced
- 1 tsp Marcum Italian Seasoning
- 1/2 tsp Marcum Parsley Flakes
- 1/2 tsp Marcum Salt
- 1/4 tsp Marcum Black Pepper Ground
- 6 cups fresh Vegetables, chopped into 1–2-inch chunks (Zucchini, summer Squash, Bell Pepper, Onion, Mushroom, etc.)
- Bamboo skewers, as needed
