Sweet Potato Casserole

  • 2 cans Pickwell Farms Cut Sweet Potatoes Rub
  • 1/3 cup Ginger Evans Light Brown Sugar
  • 1.5 cups Ginger Evans Mini Marshmallows
  • 1/2 cup Nutsome Pecan Halves
  • 1/4 tsp Marcum Pure Vanilla Extract
  • 1/4 tsp Marcum Ground Cinnamon
  • 1/4 cup Coburn Farms Unsalted Butter, melted
  • Marcum Salt & Pepper, to taste
  1. Preheat oven to 375°F. Grease a 9 x 13 pan.
  2. Drain canned sweet potatoes and transfer them to a large mixing bowl. Mash with a potato masher or the back of a wooden spoon.
  3. Add melted butter, vanilla extract, cinnamon, brown sugar and salt.
  4. Fold in half of the pecans to the mixture.
  5. Sprinkle with marshmallows and remaining pecans.
  6. Bake 25 minutes or until marshmallows are golden brown and potatoes are heated through.
  • Add a tsp of bourbon when mixing the sweet potatoes for a rustic flavor
