Ingredients:
1 cup Cooked Green Lentils
2 packed cups Fresh Spinach, roughly chopped
4 Green Onions, thinly sliced
1 Red Bell Pepper, small dice
1/4 cup Pickled Banana Pepper Rings, minced
1/2 cup
Coburn Farms
Shredded Parmesan Cheese
1/3 cup
Kurtz
Italian Vinaigrette
1 tsp
Marcum
Dry Parsley Flake
Marcum
Salt & Pepper, to taste
Directions:
Cook lentils until tender but still firm, 15-20 minutes; then drain and rinse in cold water.
Combine cooked lentils with remaining ingredients and mix well.
Season to taste with salt and pepper.
Store in refrigerator until ready to serve.
