  • 1 cup Cooked Green Lentils
  • 2 packed cups Fresh Spinach, roughly chopped
  • 4 Green Onions, thinly sliced
  • 1 Red Bell Pepper, small dice
  • 1/4 cup Pickled Banana Pepper Rings, minced
  • 1/2 cup Coburn Farms Shredded Parmesan Cheese
  • 1/3 cup Kurtz Italian Vinaigrette
  • 1 tsp Marcum Dry Parsley Flake
  • Marcum Salt & Pepper, to taste
  1. Cook lentils until tender but still firm, 15-20 minutes; then drain and rinse in cold water.
  2. Combine cooked lentils with remaining ingredients and mix well.
  3. Season to taste with salt and pepper.
  4. Store in refrigerator until ready to serve.
