Grilled Vegetable Kabobs

  • 1/4 cup Medeiros Olive Oil
  • 1 tbsp Tipton Grove Lemon Juice
  • 1 tsp Kurtz Dijon Mustard
  • 3 Cloves Garlic, minced
  • 1 tsp Marcum Italian Seasoning
  • 1/2 tsp Marcum Parsley Flakes
  • 1/2 tsp Marcum Salt
  • 1/4 tsp Marcum Black Pepper Ground
  • 6 cups fresh Vegetables, chopped into 1–2-inch chunks (Zucchini, summer Squash, Bell Pepper, Onion, Mushroom, etc.)
  • Bamboo skewers, as needed
  1. Combine olive oil, lemon juice, garlic, Italian seasoning, parsley, salt and pepper in a large bowl and whisk well to combine.
  2. Toss the cut vegetables in the marinade. Let vegetables marinade for 15 minutes.
  3. Meanwhile, soak the bamboo skewers in water and preheat grill to medium high.
  4. Thread the marinated vegetables onto the skewers. Grill kabobs for 5-7 minutes per side or until vegetables are tender.
  5. Serve immediately.
