Directions

  1. Preheat oven to 425°F.
  2. Fill a large pot with salted water and bring to a boil.
  3. In a bowl, toss cauliflower with a tsp of olive oil, lemon zest, onion powder, salt and pepper, then place on a parchment lined baking pan.
  4. Place your fillets in the oven and cook for 12 minutes, flip, then cook for another 10-12 minutes.
  5. Remove fish from oven and place in a 9x9 oven safe glass or porcelain dish. Pour half the jar of pasta sauce in the dish covering 3/4 of the fish.
  6. Add 2 cups of mozzarella cheese and one cup of shredded parmesan cheese over the fish.
  7. Cover with aluminum foil and cook for 10 minutes.
  8. While the fish is in the oven, place cauliflower on the top rack, and add your pasta to the boiling water.
  9. After 10 minutes, remove all the items from the oven.
  10. To build your plate, place spaghetti on the bottom, then spoon your fish parmigiana over the spaghetti, spoon more sauce, then garnish with lemon and parsley. Add cauliflower and enjoy!
