Portside Parmigiana & Roasted Cauliflower

Directions
- Preheat oven to 425°F.
- Fill a large pot with salted water and bring to a boil.
- In a bowl, toss cauliflower with a tsp of olive oil, lemon zest, onion powder, salt and pepper, then place on a parchment lined baking pan.
- Place your fillets in the oven and cook for 12 minutes, flip, then cook for another 10-12 minutes.
- Remove fish from oven and place in a 9x9 oven safe glass or porcelain dish. Pour half the jar of pasta sauce in the dish covering 3/4 of the fish.
- Add 2 cups of mozzarella cheese and one cup of shredded parmesan cheese over the fish.
- Cover with aluminum foil and cook for 10 minutes.
- While the fish is in the oven, place cauliflower on the top rack, and add your pasta to the boiling water.
- After 10 minutes, remove all the items from the oven.
- To build your plate, place spaghetti on the bottom, then spoon your fish parmigiana over the spaghetti, spoon more sauce, then garnish with lemon and parsley. Add cauliflower and enjoy!
