Italian Vegetable Grilled Cheese

  • 4 Slices Coburn Farms Mozzarella / Provolone Slices
  • 8 Slices Grissom’s Sandwich Bread
  • 1 Bell Pepper, Red Sliced into 1/2 inch Rounds
  • 1 Onion, Red Slices into 1/2 inch Rounds
  • 1 Zucchini, sliced into 1/2 inch Rounds
  • 2 cups Spinach
  • 1 Avocado, mashed
  • Coburn Farms Butter, Room Temperature
  • 2 tbsp Medeiros Olive Oil
  • 1 tsp Marcum Italian Seasoning
  • To Taste, Marcum Salt
  • To Taste, Marcum Black Pepper
  1. Preheat oven to 400 degrees.
  2. Toss the prepared bell pepper, onion, and zucchini with olive oil, Italian herbs, salt and pepper.
  3. Spread vegetables across a baking sheet and roast for 10-15 minutes or until vegetables are tender and browned.
  4. Remove vegetables from oven and allow to slightly cool.
  5. Place one slice of cheese onto bread, spread ¼ of the mashed avocado across the cheese, top with a small handful of spinach.
  6. Then arrange the roasted vegetables overtop the spinach. Top with a second piece of cheese and the remaining bread slice.
  7. Spread butter onto the outside of each bread slice.
  8. Heat a large pan or griddle over medium heat.
  9. Cook the sandwiches for about 3 minutes per side or until bread is toasted and golden and cheese is melted.
