Chicken Lettuce Wrap with Fruit Salsa

  • 1 1/2 lbs Boneless Skinless Chicken Breasts, cut into 1/2 inch diced
  • 1 1/2 tsp Marcum Paprika
  • 1/2 tsp Marcum Garlic Powder
  • 1/2 tsp Marcum Onion Powder
  • 1/2 tsp Marcum Dry Crushed Oregano
  • 1/4 tsp Marcum Red Pepper Flake
  • 1/2 tsp Marcum Salt
  • 2 Fresh Limes, juiced
  • 1 Fresh Jalapeno, minced
  • 1 Cucumber, peeled and 1/4 inch diced
  • 1 Mango, 1/4 inch dice
  • 1 Red or Orange Bell Pepper, 1/4 inch diced
  • 3 Green Onions, whites and greens thinly sliced
  • 1/2 cup Fresh Cilantro, chopped
  • 1 tbsp Medeiros Vegetable Oil
  • 1 head Iceberg Lettuce or Romain Lettuce
  1. Combine paprika, garlic powder, onion powder, oregano, red pepper flake and salt.
  2. In a large bowl, mix the diced chicken breast with the spice blend and set aside.
  3. In a separate bowl, combine lime juice with chopped jalapeno, cucumber, mango, bell pepper, green onion and cilantro. Season with a pinch of salt. Cover fruit salsa and store in the refrigerator until ready to use.
  4. Heat vegetable oil in a large sauté pan over medium heat. Add the diced seasoned chicken and cook 8-10 minutes or until chicken is fully cooked. Remove from heat.
  5. Meanwhile, prepare the lettuce by gently pulling apart the leaves. Gently rinse the leaves with water and pat dry.
  6. To prepare the lettuce wraps, scoop the cooked chicken onto a lettuce leaf and top with fruit salsa.
