  • Baby Back Ribs or St. Louis-style ribs 2 racks
  • Kurtz Yellow Mustard 1/4 cup
  • Marcum Seasoning 1/2 cup
  • Tipton Grove Apple Juice 1 cup
  • Kurtz BBQ Sauce 1/2 cup
  • Triumph Aluminum Foil As Needed
  1. Remove the solver skin from the back of the ribs by using a butter knife and paper towel.
  2. Dry ribs and lightly coat with mustard as a binder.
  3. Generously coat both sides with chosen Marcum Seasoning and sit for 30 minutes.
  4. Preheat smoker at 225°F and place ribs on smoker, bone side down.
  5. Close lid and smoke for 2-3 hours.
  6. Every 45-60 minutes, spritz ribs with apple juice to keep them moist.
  7. At the 2-hour mark, wrap ribs in aluminum foil with a splash of apple juice.
  8. Cook wrapped ribs for another 1 hour to tenderize the ribs.
  9. Remove from smoker, unwrap, brush on BBQ Sauce and cook for another 1 hour.
  10. Rest ribs for 10-15 minutes before slicing.
