Directions
- Preheat oven to 400 degrees.
- Toss the prepared bell pepper, onion, and zucchini with olive oil, Italian herbs, salt and pepper.
- Spread vegetables across a baking sheet and roast for 10-15 minutes or until vegetables are tender and browned.
- Remove vegetables from oven and allow to slightly cool.
- Place one slice of cheese onto bread, spread ¼ of the mashed avocado across the cheese, top with a small handful of spinach.
- Then arrange the roasted vegetables overtop the spinach. Top with a second piece of cheese and the remaining bread slice.
- Spread butter onto the outside of each bread slice.
- Heat a large pan or griddle over medium heat.
- Cook the sandwiches for about 3 minutes per side or until bread is toasted and golden and cheese is melted.

- 8 Slices Grissom`s Sandwich Bread
- 1 Bell Pepper, Red Sliced into 1/2 inch Rounds
- 1 Onion, Red Slices into 1/2 inch Rounds
- 1 Zucchini, sliced into 1/2 inch Rounds
- 2 cups Spinach
- 1 Avocado, mashed
- Coburn Farms Butter, Room Temperature
- 2 tbsp Medeiros Olive Oil
- 1 tsp Marcum Italian Seasoning
- To Taste, Marcum Salt
- To Taste, Marcum Black Pepper
