Directions
- Preheat oven to 350 °
- Pat chicken dry with paper towels.
- Rub oil all over chicken.
- Season chicken with rub; distribute seasoning evenly over chicken, including under skin and in cavity.
- Roast chicken for 1 ½ to 2 hours (time will vary depending on size of chicken). Baste chicken occasionally with pan juice. Roast until thigh is 170 °F and breast is 165 °F.
- Allow chicken to rest for 10 minutes before carving.
