One Pan London Broil

- 2.5 lbs Top Round London Broil
- 5 lb bag Golden Potatoes
- 1 Large Yellow Onion
- 2 Lemon
- 1 bunch Fresh Parsley
- Medieros Olive or Canola Oil, as needed
- Marcum Salt or Pepper, as needed
- Preheat oven to 400℉. Line a baking sheet with foil. Slice golden potatoes into quarters, dice onion and place on foil.
- Drizzle oil over potatoes and onion, then sprinkle on salt and pepper to taste. Toss to coat evenly and bake in oven 10-15 minutes.
- Chop 4 tbsp of the fresh parsley and zest 2 lemons. Combine together and set aside until serving.
- Score one side of the steak by making shallow cuts in a diagonal pattern. Sprinkle on salt and pepper to taste.
- Remove pan from oven. Raise oven rack to beneath broiler and turn broiler on.
- Place steak in center of pan, cut side up, and broil for 7-8 min. Flip steak and broil for 7-8 minutes longer.
- Cooke steak until it reaches an internal temperature of at least 135℉. Remove steak and place on a cutting board to rest for 5-10 minutes.
- Slice steak thinly, making sure to cut against the grain.
- Top the slices of steak along with potatoes and onions with the parsley/lemon mixture and serve.
- Season or marinate the meat with your favorite seasonings before cooking.
- Utilize some of the lemon juice for extra zest atop your dish!
