Snowball Cupcakes

  • 1 box White Cake Mix
  • as needed, White Icing
  • 2 cups Ginger Evans Coconut Sweet Flakes
  • 3 Good Nature Eggs
  • 1/2 cup Medeiros Oil
  • 1 cup Water
  • 24 Ginger Evans Baking Cups
  1. Preheat oven to 350˚F; spray baking cups with cooking spray.
  2. Beat cake mix, water, oil, and eggs in a bowl with a mixer on medium speed for 2 minutes.
  3. Fill 24 baking cups with batter. Bake for 19 to 23 minutes.
  4. Use a toothpick to ensure cupcakes are cooked through.
  5. Let cupcakes cool for 20 minutes then ice with white icing.
  6. Completely cover iced cupcakes with coconut flakes.
  7. Enjoy!
