Spooky Blueberry Mummy Muffins

  • 1 Ginger Evans Blueberry Muffin Mix
  • as needed, Cream Cheese Frosting
  • 24 Fairhill Farms Blueberries
  • 12 Ginger Evans Paper Baking Cups
  • 1/2 cup Coburn Farms Milk
  1. Prepare your muffin pan and muffin cups by spraying the inside of each muffin cup with baking spray.
  2. Preheat oven to 425°F.
  3. Prepare muffins according to directions on the box.
  4. After 15-20 minutes of cooking, allow muffins to cool for 20 minutes.
  5. Once muffins are cooled, transfer the frosting from the container into a Ziploc bag. Make a very small cut in one of the bottom corners of the bag.
  6. From the top of the muffin, pipe frosting from left to right creating the mummies’ wraps, leaving a small area for the mummies’ eyes.
  7. Pipe two small circles to use for the eyes, then place two blueberries on the circles.
  8. Let the icing dry for a few minutes, then enjoy.
  1. You can use mini chocolate chips for eyes as well.
  2. Add lemon zest or cinnamon to the muffin mix for extra flavor.
