Cheesy Ranch Potatoes

3 lbs Red Potatoes, unpeeled and quartered
1/2 Cup Ranch Dressing
2 Tbsp Garlic Powder
1 1/2 Cups Shredded Mexican Cheese Blend
1 Tbsp Fresh Parsley


Tip: Want to take these potatoes over the top? Top with cooked, crumbled bacon before broiling!


  1. Preheat an oven to 400 degrees.
  2. Fill a large pot with salted water. Add potatoes and bring to boil for 8-12 minutes until soft but not mushy.
  3. Drain potatoes.
  4. Add ranch dressing to potatoes and toss to coat.
  5. Grease a 9x13 inch pan. Add potatoes to the pan.
  6. Top with garlic powder. Bake for 20 minutes.
  7. After 20 minutes, add cheese on top of the potatoes. Switch oven to broil and cook for 2-3 minutes until cheese is melted.
  8. Top with fresh parsley.
