Bacon Fried Hominy

2 Cups Zucchini
1 Tsp Ground Black Pepper
As Needed Iodized Salt
As Needed Parsley Flakes
8 Slices Bacon
1 chopped Yellow Onions
5 Cups White Hominy


  1. Slice onion and split zucchini into 2 long halves
  2. Grill until char marks form, remove and dice into small pieces
  3. Cook bacon in a large skillet until crispy, remove and cut into small pieces
  4. Add hominy, diced onion, and diced zucchini to bacon grease pan, and fry until pieces start to brown
  5. Stir bacon pieces and black pepper into hominy mixture, season with extra salt if needed
  6. Sprinkle parsley flakes evenly over top of mixture
  7. Serve


Tastes just like a breakfast hash!
