Directions

  1. Preheat oven to 400°F.
  2. Spray muffin tray with cooking spray or line with baking cups.
  3. Mix together corn muffin mix, egg, milk, and cheese.
  4. In a separate bowl, mix together pork and BBQ sauce.
  5. Fill the muffin tins half way, add 1-2 tbsp of pulled pork to each cup.
  6. Top muffins with the remaining batter.
  7. Use the remaining 1/4 of shredded cheese to top each muffin.
  8. Bake for 20 minutes, use a toothpick to determine if product is done.
  9. Remove from tin and allow to cool before serving.
