Directions

  1. In a medium sized pot, bring 4 cups of water to a boil. Once boiling, add 2 cups of rice. Cover pot and simmer for 20 minutes.
  2. In a large skillet over medium heat, add oil and luncheon loaf cubes and sauté for 5 minutes or until they begin to brown. Remove from pot and set aside.
  3. Heat 1 tbsp of oil in the same skillet. Add mixed vegetable and allow to cook for 3 minutes.
  4. Once rice is done cooking, transfer to skillet with the vegetables, and cook for 5 minutes.
  5. Add beaten eggs to the skillet and cook for another 5 minutes, stirring occasionally so the eggs do not stick.
  6. Add luncheon loaf cubes back to the skillet and add garlic, ginger and soy sauce, and sauté for 2 minutes, let cool then enjoy!

  • Add Sesame Seed, Sriracha, green onions, and cucumber even more flavor

  • 1 can Fairhill Farms Mixed Vegetables, drained
  • 8 eggs Good Nature Eggs, beaten
  • 2 tbsp Jade Dragon Soy Sauce
  • 1 tsp Marcum Garlic Powder
  • 1/2 tsp Marcum Ground Ginger
  • 1 tbsp Medeiros Vegetable Oil
