Directions

  1. In a large pot, heat a tablespoon of oil or butter. Add onion and celery, cooking 3 - 4 minutes until softened.
  2. Stir in carrots, potatoes, and cabbage. Cook for another 2 - 3 minutes.
  3. Add in chicken stock, diced tomatoes, tomato paste and bring to a slight boil and cook for 5 minutes.
  4. Season soup with the Italian Seasoning, Salt, and Pepper then let simmer for 15-20 minutes or until the potatoes are soft.
  5. Taste and season to your liking, then enjoy!

Recipe Tips

  • Use fresh basil, oregano, rosemary, and parsley for a fresher flavor
  • Add crushed red pepper if you want a little kick
  • Add an extra cup of water, if you want more liquid in your soup
