Mexican Pulled Pork Bowl with Cilantro Rice

Directions
- Place a stock pot on the stove over medium heat. Add 2 tbsp of oil to the pan. Sauté the garlic for 1 minute, then add 1 cup of washed rice.
- Sauté the rice for 1 more minute then add 2 cups of water.
- Bring the water to a boil. Once boiling, cover the pot with a lid and put the heat on a simmer. Allow to cook for 15-20 minutes.
- Once you rice is ready, add cilantro into the rice and mix.
- Prepare your bowl; add 1/2 cup of rice to each bowl, 4 oz of pulled pork, 1/4 cup of cheese, guacamole, sour cream, beans, canned tomatoes and lettuce.
Recipe Tips
- Substitute the 2 cups of water for 2 cups of chicken stock / broth
- Add lime juice over the bowl
- Season with chili powder and cumin or a taco seasoning pack, if desired
