Island Spiced Shrimp Kabobs

- 1 bag Portside Raw Shrimp, 40-60 ct
- 1 cup Tipton Grove Tropical Fruit Juice Drink
- 1 Tbsp Bramley’s 100% Pure Honey Bear
- Two, cut into 1″ pieces Vidalia Onions.
- Two, cut into 1″ pieces Red or Green Bell Pepper
- Two, cut into 1″ cubes Mango
- 1 tsp Marcum Ground Ginger
- 1 tsp Marcum Garlic Powder
- Marcum Salt & Black Pepper
- Metal or Bamboo Skewers
- Combine the juice and honey. Reserve ¼ cup and set aside.
- Remove tails from shrimp. Place shrimp and remaining marinade in a large zipper bag. Marinate for 30 minutes – 2 hours in the refrigerator.
- Remove shrimp from bag and discard the marinade. While marinating, chop veggies and mango into their correct sizes.
- Thread shrimp onto skewers, alternating onion, mango, shrimp then bell pepper.
- Turn the grill on medium heat. Oil/ grease grates with spray or an oiled rag.
- Season with salt, pepper,garlic powder & ginger. Place skewers on grill and cook until shrimp are pink and slightly charred, about 3 minutes per side.
- Baste with reserved marinade as the shrimp cook. Remove shrimp from grill.
- Serve with cooked rice or salad greens, and enjoy!
- If using bamboo skewers, soak them in water for 10 minutes to prevent burning.
- Season with Marcum clove, paprika, allspice, and lime to make the flavor more authentic.
- You can keep the marinade and cook it for 5 minutes or until it boils. Then use as a sauce.
- Add cilantro and garlic to the rice/salad greens for even more Caribbean flavor!
