Chicken Lettuce Wrap with Fruit Salsa

Directions
- Combine paprika, garlic powder, onion powder, oregano, red pepper flake and salt.
- In a large bowl, mix the diced chicken breast with the spice blend and set aside.
- In a separate bowl, combine lime juice with chopped jalapeno, cucumber, mango, bell pepper, green onion and cilantro. Season with a pinch of salt. Cover fruit salsa and store in the refrigerator until ready to use.
- Heat vegetable oil in a large sauté pan over medium heat. Add the diced seasoned chicken and cook 8-10 minutes or until chicken is fully cooked. Remove from heat.
- Meanwhile, prepare the lettuce by gently pulling apart the leaves. Gently rinse the leaves with water and pat dry.
- To prepare the lettuce wraps, scoop the cooked chicken onto a lettuce leaf and top with fruit salsa.

- 2 Fresh Limes, juiced
- 1 Fresh Jalapeno, minced
- 1 Cucumber, peeled and 1/4 inch diced
- 1 Mango, 1/4 inch dice
- 1 Red or Orange Bell Pepper, 1/4 inch diced
- 3 Green Onions, whites and greens thinly sliced
- 1/2 cup Fresh Cilantro, chopped
- 1 tbsp Medeiros Vegetable Oil
- 1 head Iceberg Lettuce or Romain Lettuce
