Seasoned Roast Chicken

  • 1 Whole Fryer Chicken (4-6 lbs.)
  • 3 Tbsp Medeiros Vegetable Oil
  • 1/4 cup Marcum Gourmet Seasoning Rub (such as Beer Can Chicken Smokey Mesquite)
  1. Preheat oven to 350 °
  2. Pat chicken dry with paper towels.
  3. Rub oil all over chicken.
  4. Season chicken with rub; distribute seasoning evenly over chicken, including under skin and in cavity.
  5. Roast chicken for 1 ½ to 2 hours (time will vary depending on size of chicken). Baste chicken occasionally with pan juice. Roast until thigh is 170 °F and breast is 165 °F.
  6. Allow chicken to rest for 10 minutes before carving.
