  • Pork Shoulder/Butt 6-8 lbs
  • Kurtz Yellow Mustard 2 tbsp
  • Marcum Seasoning 1/4 cup
  • Triumph Aluminum Foil As needed
  • Grissom's Hamburger Buns 8
  • Clow Slaw As desired
  • Kurtz BBQ Sauce As desired
  1. Pat the pork shoulder dry then rub mustard all over the pork (acts as a binder).
  2. Generously coat pork rub on all sides with chosen Marcum Seasoning.
  3. Preheat smoker and set to 225°F.
  4. Place pork directly on grates and smoke until internal temp hits 165°F.
  5. Wrap pork in foil and return to smoker until internal temp reaches 195–203°F.
  6. Let rest (still wrapped) in cooler or turned off oven for 1 hour.
  7. Unwrap and shred with forks or meat claws.
  8. Mix with juices from the wrap for extra flavor.
  9. Serve with buns, cole slaw and Kurtz BBQ Sauce.
  • Instead of aluminum foil, use butcher paper
