Directions

  1. Grind chicken thighs in food processor for 1-2 minutes.
  2. Seasoning chicken thighs with garlic pepper and salt and place in fridge for 30 minutes.
  3. Divide chicken into 8 loose balls about 3-3 1/2 oz each.
  4. Heat skillet or griddle over medium‑high to high heat. Add oil and let it get hot.
  5. Place 2 chicken balls in the pan (don’t overcrowd). Immediately smash each ball flat using a spatula (use parchment between spatula and patty if needed).
  6. Add additional seasoning if desired. In a separate pan, add 1 tbsp of oil over medium heat and sauté onions for 5-7 minutes.
  7. Cook patties for 2-3 minutes, or until edges get brown and crispy. Then flip.
  8. Add cheese to each patty after flipping and cook for 1-2 minutes.
  9. Toast buns and assemble burgers.
  10. Place 2 patties on the bottom pun, sautéed onions, then additional toppings of your choice.
