Monster Munch Cookies
Ingredients:
- Kiggins Oats, Old Fashioned Whole Rolled 1 and 1/2 cups
- Nutsome Peanut Butter, Creamy or Crunchy 1 cup
- Ginger Evans Brown Sugar, packed 2/3 cup
- M & M's, regular size 1/2 cup
- Semi-sweet Chocolate Chips 1/3 cup
- Good Nature Eggs, large, room temperature 2
- Coburn Farms Unsalted Butter, melted 3 tbs
- Marcum Vanilla Extract 1 tsp
- Marcum Baking Soda 1 tsp
- Marcum Salt a pinch
Directions:
- In a medium bowl, mix together oats, baking soda, and salt until everything is combined evenly.
- In a large bowl, whisk together eggs, brown sugar, vanilla, and melted butter. Once fully incorporated mix in peanut butter.
- Combine dry and wet ingredients together using a spatula to mix, then add M&M's and chocolate chips, and mix again.
- Cover bowl tightly and refrigerate for 30 minutes.
- Preheat oven to 350°F while dough is chilling.
- Line a large sheet tray with parchment paper.
- Divide dough into 2 tbsp scoops and place on the sheet tray. Bake for 13-15 minutes or until golden brown.
- Let rest for 15 minutes, and transfer to a rack to cool for more time, enjoy!
Recipe tips:
- Add cinnamon to cookies to give more of an autumn flavor profile
- Add crushed pretzels to cookies for a salty crunch.
