Beef Stew Steak with Greens

  • 4 Steak, Ribeye or T- bone
  • 12 oz Fairhill Farms Spinach
  • 15 oz Fairhill Farms Sweet Potatoes, drained
  • 2 tbsp Coburn Farms Butter
  • 1 packet Marcum Beef Stew Seasoning Mix
  • 1/2 cup Mederios Olive Oil
  • Marcum Salt & Pepper as needed
  • 1 tsp Marcum Garlic Powder
  • Marcum Parsley as garnish
  1. Mix half a packet of beef stew seasoning mix with 1/2 cup of oil. Place steaks in a storage bag with marinade for at least an hour.
  2. After an hour, pat steak dry and season with salt & pepper, and remaining beef stew seasoning mix.
  3. On a grill or cast iron skillet on medium heat, cook steak for 4 minutes on each side then remove and let rest for 5 minutes.
  4. While steak is cooling, add sweet potatoes to a medium pot with one tbsp of butter and cook for 3 minutes, season with salt and pepper.
  5. Cook spinach according to instructions on the packaging or sauté in a skillet with one tbsp of butter, and season with 1 tsp of garlic powder and cook for 3 minutes.
  6. Assemble your plates with steak and vegetables, then enjoy.
  • Pair with any Kurtz sauce or Marcum gravy
  • Add crushed red pepper to the spinach for an extra kick
