Directions

  1. In a skillet over medium-low heat, add butter and onions, salt your onions. Use parchment paper to make a cartouche and place over the onions.
  2. Cook for 45 - 60 minutes. Allow to get golden brown.
  3. Remove onions from pan and deglaze with a 1/4 cup of heavy cream.
  4. Place onions and cream in a blender, blend until smooth.
  5. Strain through a fine strainer then adjust salt to your preference.
