  1. Crack eggs into a bowl. Add salt and pepper, briefly whisk until combined.
  2. Heat a nonstick skillet over medium-low heat
  3. Add 1 tablespoon butter to pan and let it melt without browning.
  4. Pour in 3 eggs and immediately begin stirring rapidly with a fork or spatula while shaking the pan, keep the eggs moving constantly. This creates a fine, custard-like texture.
  5. When eggs are mostly set but still slightly soft, stop stirring and smooth the surface.
  6. Add herbs or a small amount of filling.
  7. Tilt the pan and gently roll the omelet into a cigar/oval shape.
  8. Turn onto a plate seam-side down for a smooth, pale exterior.
