Directions
- Cook lentils until tender but still firm, 15-20 minutes; then drain and rinse in cold water.
- Combine cooked lentils with remaining ingredients and mix well.
- Season to taste with salt and pepper.
- Store in refrigerator until ready to serve.

- 1 cup Cooked Green Lentils
- 2 packed cups Fresh Spinach, roughly chopped
- 4 Green Onions, thinly sliced
- 1 Red Bell Pepper, small dice
- 1/4 cup Pickled Banana Pepper Rings, minced
- 1/2 cup Coburn Farms Shredded Parmesan Cheese
- 1/3 cup Kurtz Italian Vinaigrette
- 1 tsp Marcum Dry Parsley Flake
- Marcum Salt & Pepper, to taste
