Directions
- Dice chicken and place in a bowl with spices, 1 tbsp of lemon zest, and 1 tbsp of olive oil and set aside.
- Bring a pot of water to boil on the stove and cook pasta according to package directions.
- Using a clean cutting board slice veggies and place in a separate bowl with 2 tbsp of lemon zest and toss.
- Prepare caramelized onion sauce.
- While pasta is cooking, cook diced chicken in a skillet over medium heat for 7-10 minutes.
- Once pasta is done, strain, and cool off with cold water.
- Assemble the dish: combine pasta, onion sauce, vegetables, chicken and vinegar together in a bowl, toss the ingredients, and adjust seasoning as desired.

- Red Wine Vinegar 3 tbsp
- Lemon Zest 2 tbsp
- Caramelized Onion Sauce (see recipe) 4 tbsp
