Directions

  1. Dice chicken and place in a bowl with spices, 1 tbsp of lemon zest, and 1 tbsp of olive oil and set aside.
  2. Bring a pot of water to boil on the stove and cook pasta according to package directions.
  3. Using a clean cutting board slice veggies and place in a separate bowl with 2 tbsp of lemon zest and toss.
  4. Prepare caramelized onion sauce.
  5. While pasta is cooking, cook diced chicken in a skillet over medium heat for 7-10 minutes.
  6. Once pasta is done, strain, and cool off with cold water.
  7. Assemble the dish: combine pasta, onion sauce, vegetables, chicken and vinegar together in a bowl, toss the ingredients, and adjust seasoning as desired.
  8. Enjoy

  • Add fresh basil, parsley, green onion, and lemon juice to pasta.
