Directions

  1. Cook pasta according to package directions. Drain and reserve ½ cup pasta water.
  2. While pasta cooks, spray a large skillet with cooking spray or lightly coat with oil. Sauté zucchini, red pepper, and onion over medium-high heat for 6–8 minutes until tender-crisp.
  3. Stir in Marcum Italian Seasoning, Marcum Salt, and Marcum Black Pepper.
  4. Add Mantia's Garlic & Herb Pasta Sauce and bring to a gentle simmer.
  5. In a small bowl, combine Coburn Farms Ricotta Cheese, lemon zest, and lemon juice. Stir until smooth.
  6. Reduce heat to low and fold the ricotta mixture into the sauce until creamy and fully incorporated.
  7. Add cooked spaghetti to skillet and toss to coat. Add reserved pasta water as needed to achieve a silky sauce consistency.
  8. Cook for an additional 1-2 minutes to ensure everything is heated through.
  9. Serve immediately and garnish with additional lemon zest, if desired.
