Directions

  1. Sift flour and a pinch of salt into a mound on a counter.
  2. Make a well in the center and add in the eggs.
  3. While using your fingers, mix in the flour. Once incorporated, knead for about 10 minutes.
  4. If your mixture is too soft, add more flour, if it's too firm, add a small amount of water.
  5. Shape the dough into a ball and rest for 15 minutes.
  6. Lightly flour the surface of your counter, then dust a pizza roller with flour and roll out your thin pasta sheet.

  • Add Beet juice for pink pasta
  • Add carrot juice for orange pasta
  • Add pureed parsley for green pasta
  • Add squid ink for black pasta
