- Crack eggs into a bowl. Add salt and pepper, briefly whisk until combined.
- Heat a nonstick skillet over medium-low heat
- Add 1 tablespoon butter to pan and let it melt without browning.
- Pour in 3 eggs and immediately begin stirring rapidly with a fork or spatula while shaking the pan, keep the eggs moving constantly. This creates a fine, custard-like texture.
- When eggs are mostly set but still slightly soft, stop stirring and smooth the surface.
- Add herbs or a small amount of filling.
- Tilt the pan and gently roll the omelet into a cigar/oval shape.
- Turn onto a plate seam-side down for a smooth, pale exterior.
