Directions

  1. Cook pasta according to package directions (typically 3–5 minutes). Reserve ½ cup pasta water, then drain.
  2. Season diced chicken with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6–8 minutes until golden brown and reaches 165°F. Add garlic and cook for 30 seconds.
  3. Reduce heat to medium. Stir in pesto and reserved pasta water. Add cherry tomatoes and cook 1–2 minutes.
  4. Add pasta to skillet. Top with Parmesan cheese and lemon juice.
  5. Mix until pasta is evenly coated. Add a little more pasta water if needed.
  6. Top with additional Parmesan and fresh basil then serve.

  • 1 lb. Boneless, Skinless Chicken Breasts, diced
  • 7-8 oz Pesto, jarred
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Mantia's Parmesan Cheese
  • 1/2 cup Pasta water
  • 3 cloves Garlic, minced
  • 2 tbsp Medeiros Olive Oil
  • 1 tsp Marcum Italian Seasoning
  • 1 tsp Marcum Salt
  • 1/2 tsp Marcum Black Pepper
  • 1 Lemon, zest & juice
  • 1/2 cup Fresh Basil, chopped
